We’ve taken our Breakfast Berry & Almond Bar and made a delicious cupcake or three…
Add a twist to your cupcakes by adding a NINE Breakfast Berry & Almond bar to the mix
These NINE Berry & Almond inspired vegan cupcakes are so good and super easy to make. Starring our very own Breakfast Berry & Almond bar they are sure to be a hit any time of the day with all the family. The seeds make for a nice texture when baked adding a little crunch and more goodness to your cupcakes and your day!
Here is our recipe for you to try out, they are super quick and super easy to make too!
Ingredients
- 200g vegan self-raising flour
- 190g sugar
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 190ml dairy free milk
- 90 ml oil
- 1 x 50g berry & almond NINE bar
- 1 tbsp almond essence
- 1 punnet of fresh raspberries – take out 10 to garnish
For The Buttercream
- 100g dairy free butter
- 100g trex vegetable fat
- 200g icing sugar
- 3 tbsp dairy free milk
- 1 tbsp almond essence
Instructions
- Preheat the oven to 1 degrees.
- Add together in a mixing bowl the almond essence, oil and dairy free milk and stir.
- Next carefully stir in the dry ingredients (flour, sugar, crumbled NINE bar, baking powder and bicarbonate of soda).
- Mix well then stir in the raspberries.
- Spoon the mixture into cupcake cases – this should make around 10 cupcakes.
- Place in the oven and bake for around 15-20 mins.
- To make the buttercream; add all the ingredients to a bowl and whisk together with an electric whisk until combined.
- Once the cakes have cooled you can top with the buttercream
- Garnish with a fresh raspberry
