Gluten free autumn loaf

Gluten free and the perfect accomplice to a hot cuppa!


  • 175g mashed ripe bananas
  • 170g brown sugar
  • 4 tbsp. unsweetened apple sauce
  • 50ml canola oil
  • 2 eggs
  • 140g sorghum flour
  • 140g brown rice flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 80g raisins
  • 38g chopped walnuts


1.) In a large bowl, beat the bananas, brown sugar, apple sauce, oil and eggs until well blended.

2.) Combine the flour, baking powder, baking soda, salt and cinnamon; gradually beat into banana mixture until blended.

3.) Stir in the raisins and walnuts.

4.) Transfer to a 9-in. x 5-in. loaf pan coated with cooking spray. Bake at 350° for 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack.
